Lip Smackin’ Fried Chicken & Waffles

After being inspired by one of our favorite brunch spots in Salt Lake (Pig & A Jelly Jar)’s signature dishes, Fried Chicken & Waffles, I decided to create my very own twist on this classic combo. The results were DELICIOUS

chicken and waffles-2I made crispy, slightly smoky, fried chicken and cinnamon honey waffles, topped with butter and 100% maple syrup. So freaking good. Nathan said it was incredible – the only thing missing was bacon! (so if you’re looking for something to “up your game”, there ya go!)

(serves roughly 4-5 people)
I measured all the seasonings by eyeballing them. So just do them to your own taste.

3 Chicken Breasts, cut into strips
2 cups flour
Black Pepper
Smoky Paprika
Chili Powder
Smoky Salt (I picked this up at Winco, but you can also get some on Amazon!)
Garlic Salt
2 tsp Cornstarch
1 1/2 Cups Whole Milk
1 Egg
Avocado Oil, for frying

Preheat oven to 350 degrees Farhenhieght. Set out a baking sheet with parchment paper. In a bowl, mix milk, egg, and 1 tsp cornstarch. On a large plate, mix together flour, seasonings, and the remaining cornstarch.  Take your raw chicken and dip it in the milk mixture, then coat it in the flour mixture. Repeat. Next, heat up your oil on medium low in a large skillet on the stove. Brown your coated chicken in the oil. This should take about 2-3 minutes. The goal here is to just get the outside nice and crispy, don’t worry if your chicken isn’t completely cooked. Transfer the crisped chicken onto the baking sheet. Pop in the oven for about 20 minutes. (This gives you the perfect amount of time to whip up some waffles!)

Chicken frying – should be about this color when you pull it out.


(makes about 16 waffles) 
If you prefer more savory than sweet waffles, leave out the honey and cinnamon!

4 Cups of Flour, sifted
2 Tablespoons Baking Powder
1 tsp Sea Salt
4 Beaten Egg Yolks
2 3/4 Cup Whole Milk (use buttermilk if you have it!)
1 Cup Melted, cooled butter
2 Tablespoons Raw Honey
1 teaspoon ground Cinnamon
4 Stiff Beaten Egg Whites

Mix together all the dry ingredients, then mix in the egg yolks, milk, butter, honey, and cinnamon until ingredients are incorporated. Do not over mix.
Fold in your egg whites, again, be careful not to over mix. The key to incredible waffles is a light and fluffy batter. Pour batter into your preheated waffle iron and cook until done. Serve warm!
